Dal Makhani Recipe

Ingredients

  • Urad Dal – 1 bowl (whole size)
  • Rajma (kidney beans) – 1/2 bowl
  • Tomato – 1 medium size
  • Cumin seeds – 1/2 tsp
  • Turmeric – 1/2 tsp
  • Coriander powder – 1 tsp
  • Fresh coriander leaves – 10 leaves
  • Red chili powder – 1 tsp
  • Salt –  as per taste
  • Garam masala – 2 bay leaves, 2 cloves, 1 cinnamon stick, 2 cardamoms,
  • Mustard oil – 1 tsp
  • Cow Ghee – 2 tsp

Option things

  • Butter – 2 tsp
  • Cumin seeds powder – 1 tsp
  • Kasuri methi – 1 tsp

How to make Dal Makhani Recipe

  • To making the dal makhani recipe first, soak urad dal and rajma in freshwater for 4 hours. now remove soaked urad dal and rajma in the pressure cooker and add some amount of salt and allow cooking up to three whistles and switch off the gas flame.
  • Allow normal depressurize pressure cooker when cooker gets normal, mess dal and rajma completely with the help of a blender or ladle. this will help you in making delicious dal makhani recipes.
  • Now all garam masalas on a plate, take a tomato and blend it in the mixer and make a paste.
  • Take a pan at putting it on gal flame for heating when the pan gets heat to add oil when oil gets heating set gas at low flame and add cumin seeds when seeds get golden add tomato puri and garam masala if you want to use garam masala powder add it in the last movement. same for butter.
  • Set gas at low flame and simmer slowly till all masalas start giving a masala aroma when all masalas get cooked oil will be separated from masalas.
  • Add boiled urad dal and rajma in the pan and mix it well and put the lid on the pan and allow cook up to 30 minutes. in-between mix some times with help of ladle otherwise dal will stick at pan bottom.
  • During the cooking process take Kasuri methi and rub it by hand and add it to a pan and mix it well and set gas at low flame.
  • If you want a more delicious dal makhani recipe to boil it for a longer time as possible.
  • During boiling, if it gets thick add some water to it after 30 minutes switch off the flame add butter or cream.
  • Serve hot and garnish with fresh coriander leaves.

Ingredients

  • 1 Mixed Fruit
  • 2 Hung Yoghurt
  • 1/4 Cup Mango Pulp
  • 3/4 Cups Castor sugar
  • 8-10 Black  Grapes
  • 1 Apple
  • 2 Banana
  • 2 Peeled Chickoos
  • 5-6 Strawberries
  • 1 Kiwi
  • 2-3 Red velvet cakes
  • Instructions

  • Peel apple, kiwi and bananas and cut into small pieces and put them into a bowl.
  • Whisk together yoghurt and castor sugar in another bowl till well blended.
  • Add mango pulp and continue to whisk.
  • Add the mixture to the fruits and mix well.
  • Chill in the refrigerator for 15-20 minutes and serve cold in a martini glass or a bowl.
  • Blend custard with an electric beater and add to fruits.
  • Mix well.
  • Crumble velvet cakes and place in a circular glass dish.
  • Press lightly, pour custard on top and spread evenly.
  • Halve the strawberry and make a fan out of it.
  • Place it in the centre of the dish.
  • Halve black grapes and place on the circular side of the dish.
  • Enjoy Fruit Shrikhand.

  • Almond powder – 100 gms
  • Sugar – 65 gms
  • Ghee – 1 tbsp
  • Liquid glucose – 10gms
  • Saffron – a pinch

How to make Pista Burfi

  • firstly, in a large bowl soak almonds in hot water for 1 hour.
  • now slowly peel the skin from badam and keep aside.
  • also, pat dries the badam making sure there is no moisture present.
  • transfer the badam into a small blender and blend to a coarse powder. keep aside.
  • meanwhile, prepare the sugar syrup by adding ¾ cup sugar and ½ cup water.
  • keeping the flame on low, stir continuously.
  • boil the sugar syrup till it forms one string consistency.
  • now add the prepared almond powder, saffron milk and cardamom powder.
  • mix continuously keeping flame on low to medium.
  • continue to mix continuously till the mixture starts to leave the pan.
  • transfer the badam dough onto the butter paper.
  • and allow cooling for 5 minutes.
  • grease your hand with little ghee and knead for a minute.
  • once you get a smooth dough, roll the dough with a rolling-pin,.
  • furthermore, cut the dough into square shape or the shape you wish for.
  • you can also decorate with silver leaf/silver mark.
  • finally, serve badam burfi/badam katli on Diwali or any festival.
  • enjoy Pista Burfi.

Ingredients

  • Wholemeal flour 250 gms.
  • Mint leaves 1 cup
  • Oil 3 tbsp.
  • Salt As per taste

How to make Pudina Paratha

  • Sieve flour.
  • Dry mint leaves on a hot griddle and then powder.
  • Mix flour, salt and mint powder, add water to make a semi hard dough.
  • Knead well, cover and keep aside for 10 minutes.
  • Divide into 8 equal portions,
  • Roll out each portion with a rolling pin to approximately six-inch diameter.
  • Cook rolled portion (paratha) on a Tawa (griddle plate), on moderate heat for 3 minutes.
  • Turn it and smear half a tablespoon of oil on the paratha.
  • Repeat the same on the other side.
  • Cook on low heat till golden brown.
  • Serve hot with Dal Pakhtooni or curry of your choice.
  • Enjoy Pudina Paratha.

Mawa Gujiya is a traditional Indian fried pastry stuffed with sweet coconut and Khoya filling. Gujia is must make a recipe for the festival of Holi.

Ingredients

For The Filling
200 gms Khoya/Mawa
2 tablespoon desiccated coconut
2 tablespoon sugar
1/2 tsp green cardamom powder
1/2 cup chopped mixed nuts( almonds, pistachios, Mellon
seeds, raisins/ kishmish)

For The Crust:
1 cup all-purpose flour( maida)
1 tablespoon fine sooji( semolina)
2 tablespoon oil
1/2 cup water at room temp.


Garnish:
1 cup of sugar
1/2 cup water
2 tablespoon finely sliced almonds & pistachios



Instructions

Filling:
1. Mash the khoya, transfer to a pan & start cooking on medium heat until it becomes soft. Add sugar, nuts,
cardamom powder & coconut powder. Stir continuously until the mixture starts leaving the sides of the pan.
Switch off the heat.
2. Set aside & let it cool ( the mixture should be slightly moist after cooling if it seems too dry add a tsp of warm
milk & moisten a little)
Crust:
1. Mix flour, sooji & oil in a bowl, make a soft dough adding water as needed. Knead the dough 2-3 mins. until it
becomes soft & even.
2. Roll the dough into a ball, cover it with a damp cloth & let it sit for about 10 mins.

Making the gujiya:
1. After 10 mins. knead the dough again for a min.
2. divide dough into 20 equal parts & roll into small balls.
3. Divide the filling also into 20 equal parts & roll each portion into the palm of your hands ( this is how I do it as it
becomes very easy to be placed in the dough)
4. With a rolling pin roll each ball into approx. 4 “ diameter rounds.
5. To fold the gujiyas , moisten the edges of each rolled dough round with the tip of your finger dipped in water.
6. Place a portion of the filling on each round on one half side, fold in a semi-circle & press the edges with the tip
of your finger or a fork . A fork helps to seal the edges tightly & beautifully.
8. Heat enough oil for frying in a pan or wok . To test if the oil is hot enough drop a small piece of the dough into




the oil, it should start sizzling but come up onto the surface slowly. If the piece of dough comes up immediately
this means the oil is too hot . In this case turn off the heat for sometime & let oil cool a little.
9. Place the gujiyas in the oil one by one. Fry 4-5 gujiya batches. As the gujiyas start floating on the oil, turn them
slowly. Fry gujiyas on medium heat until they turn golden on all sides. If fried on high heat the crust will remain
soft & the inner layer will be uncooked.
10. When golden, remove from oil & place on kitchen paper

11. Enjoy Mawa Gujiya.

VERMICELLI KHEER RECIPE | SEVIYAN KHEER RECIPE

Vermicelli Kheer Recipe, sevai kheer, or semiya kheer is a delicious Indian dessert recipe made using vermicelli and milk.

Ingredients

for Roasting 

  • Ghee           1 tsp
  • Cloves         3
  • Vermicelli    1 or 1.5 cup

for making vermicelli kheer 

  • Milk  500 ml
  • Sugar 3 tsp
  • Cardamom pods   4-5 green
  • Almonds 8-10 roasted or fried
  • Cashew nuts 8-10 roasted or fried
  • Raisins 2 tsp
  • Saffron 5-6 strands
  • Any other dry fruits of your choice

How to make Vermicelli Kheer Recipe

  • Heat t tsp of pure ghee in a heavy pan or Kadai.
  • fry the cloves and cardamom till they release their aroma completely in the ghee.
  • reduce the flame to its lowest and add vermicelli or seviyan and fry till they become golden brown.
  • pour milk and let it come to boil during boiling stir milk and keep flame at low.
  • Add sugar and mix well for 2-3 minutes.
  • Lower the gas flame and let the milk simmer for 5 minutes till the seviyan or vermicelli gets cooked.
  • Add 5-6 saffron strands and mix well.
  • Next, add chopped almonds and cashew nuts and stir slowly.
  • Add cardamom powder of 1 tsp.
  • Add raisins and other dry fruits, if you have planned to add for taste.
  • Serve the vermicelli kheer or seviyan kheer hot, warm or chilled.
  • if serving chilled, then refrigerate the seviyan kheer and serve later.
  • Enjoy Vermicelli kheer or seviyan kheer.

Note 

  • Seviyan can be easily doubled in size by just adding some extra milk and water.
  • Always use good quality and pure milk.
  • As per the consistency of seviyan kheer, you can add or remove the amount of roasted seviyan.
  • Dry fruits depend on your choice if you want you can more and don’t want too much you can reduce.
  • After adding seviyan in Kadai during roasting, keep flame low or less medium, so that seviyan will not burn.
  • Colour of seviyan always golden brown.
  • Addition of cloves, saffron, and rose petals are optional but they all enhance the taste of seviyan kheer.
  • For a delicious taste of seviyan kheer, eat after 1 or 2 hours of cooking.
